Waffles with Grits: http://rebeccmeister.livejournal.com/708504.html 1 C flour 1 C grits (or cornmeal) 2 tsp baking powder 1 tsp baking soda 1/4 tsp salt 3 eggs 2 C buttermilk, or 2 C milk plus 1-2 Tbsp vinegar 6 Tbsp vegetable oil Methods: Go over to Wizard's house and notice that he doesn't have a lot of flour around. Wait until he pulls out a container of grits, then start getting ideas when you note that grits are basically coarse-ground cornmeal - kind of in between cornmeal and polenta. Get him to hook up teh internets, then Google "cornmeal waffles." Find a recipe that sounds reasonable, then substitute in grits for the cornmeal. Go back to the kitchen and ask for a mixing container of some sort. Glance at the available measuring implements, then decide that eyeballing it will be close enough (protip: practice eyeballing teaspoon quantities). Combine the dry ingredients and mix them together. Add in the eggs, the milk/vinegar or buttermilk, and vegetable oil, and mix together. There may be some lumps, but that's okay. The batter might also seem a bit on the runny side. IMPORTANT NOTE: locate a Mickey Mouse waffle maker and plug it in. Maybe add a bit of oil to it so the first waffle doesn't stick. Put in about 1/3 C of waffle batter per waffle and cook it for a few minutes until it stops producing so much steam. Take it out with a fork and give it to somebody to eat. Suggested toppings: orange marmalade, peaches in almond sauce, bananas, rhubarb sauce, whipped topping. Final note: I strongly suggest substituting in whole wheat pastry flour for white flour. It's better for you. The waffles probably won't taste the same, and probably won't be as fluffy, but you should be playing around with whole wheat flour.
