Toasted Quinoa with Kale and Pine Nuts 1 c quinoa, triple washed & drained ½ t salt 2 T olive oil, divided use 1¾ c water, boiling 3 cloves garlic, minced 4 c kale leaves, lightly packed & chopped 1 T fresh lemon juice 1/3 c toasted pine nuts salt & pepper Dry-toast quinoa in skillet, stirring until golden and fragrant, about 6 min. Transfer to medium saucepan; add salt, 1 T olive oil, and boiling water. Reduce heat to low, cover, and simmer 20 minutes. Let stand 5 minutes; fluff with fork. In skillet over medium-high heat, add 1 T olive oil and garlic; sauté 30 seconds. Add kale; sauté until deep green and tender, 3-4 minutes. Stir in quinoa, lemon juice, pine nuts, and salt and pepper to taste. Serves 4-6.
