What To Do With All Those Greens http://rebeccmeister.livejournal.com/708504.html Let's say you have a subscription to a CSA. Or, say, you go down to the local market pretty frequently and got a smokin' good deal on a bunch of greens. Or, you're finally taking all of that popular dietary wisdom to heart, to "eat more leafy green vegetables." Only problem is, you don't know what to do with them, and you've already made Peanut-Topped Greens too many times, and don't feel like going through any kind of labor-intensive process or anything. So, what then? Here are a few ideas: Wash the greens, chop them up, and throw them into your frying pan to wilt them and cook them up in your scrambled eggs with breakfast. Find a recipe for making spanakopita, and use whatever kinds of greens you've got (mustard greens are pretty tasty this way) Fry up the greens and put them into your next grilled-cheese sandwich, or your next lasagne, or even into a quesadilla. Maybe some enchiladas. Feed some to the chickens if you're feeling really overwhelmed. Then you can eat the greens in the form of eggs produced by the chickens. Keep in mind that greens generally go well with a bit of butter (or if you are not vegetarian, lard), onions, and garlic. Oh, and kale goes well with lemon or balsamic vinegar, and with some squash. Put the greens in stir-fry, or in soup. Or maybe even in your next pasta dish.
