Red Lentil - Cauliflower Curry, from Veganomicon (via Caroline) 3 Tbsp grapeseed or peanut oil 1 large onion, chopped 1 large chile pepper (jalapeno or serrano), minced 2 large shallots 1 (half-inch) piece of ginger, peeled and grated 1 large parsnip, peeled and chopped 2 tsp curry powder 1/2 tsp turmeric 1/2 tsp cinnamon 1/2 tsp coriander 1.5 C red lentils, sorted and rinsed 4 C vegetable broth/water 1.5 - 2 pounds cauliflower, in florets 2 Tbsp chopped fresh cilantro 2 Tbsp lime juice 1.5 tsp salt Saute onion and shallots, add ginger and chile. Add spices, then parsnip. Pour in broth and lentils, boil for 1 minute, then simmer for 10-12 minutes. Remove from heat and add cilantro, lime juice, and salt. Let sit for 15 minutes to develop flavor.
