Rebecca's Museli I mixed 2 Tablespoons of olive oil with ~1/4 C of honey (very roughly eyeballed) and heated the mixture until the honey was nice and runny. I then poured it onto 4 C of rolled oats (the 10-minute kind) plus ~1 C of chopped almonds and a generous fistful of unsweetened coconut pieces. I gave the business a stir with a wooden spoon and then popped it in the oven at 350 degrees Fahrenheit for a while. I opened the door to check on it and give it a stir every now and again, until it was lightly toasted, and then I pulled it out and let it cool. Once cooled, I added 1 C of chopped apricots. Later modifications: I now add 1 C of pumpkin seeds, sunflower seeds, and a full 1 C of coconut. I might swap hazelnuts for the almonds, depending on prices/etc.
