Cilantro-lime-peanut vinaigrette • 1/2 cup olive oil • 1/4 cup fresh cilantro • 1/4 cup peanut butter (I prefer natural) • 3 cloves garlic, peeled and smashed • 1 Tbsp. brown sugar • 1 Tbsp. red wine vinegar • 1 Tbsp. lime juice • 1 tsp. lime zest (approx. zest of one lime) • 1 tsp. sesame oil Combine everything except the olive oil in a food processor. Slowly drizzle in the olive oil. Mix with: greens, cabbage, beans, carrots, peanuts, cheddar cheese, raisins.
