Key Lime Pie Graham Cracker Crust: 4 C graham cracker crumbs 3/4 C sugar 1/4 C butter, melted Filling: 1 can sweetened condensed milk 1/2 C key lime juice 4 egg yolks lime zest Meringue: 4 egg whites 1/4 tsp Cream of Tartar 1/6 C powdered sugar Crust: Mix the ingredients together, and press into a pie tin. Bake for 8 minutes at 350 degrees F. Filling: Whisk together the condensed milk, lime juice, egg yolks, and lime zest. Pour into the pre-baked crust. Meringue: Beat egg whites to a soft peak, then add the cream of tartar. Continue whipping and add the sugar, whipping until the meringue forms stiff peaks. Add to the top of the filling, and bake for 15-30 minutes at 350 degrees F.
