Fruit-nut bars I modified this by leaving out the brown rice cereal. The result was on the sticky side, so the ratio of syrup to fruit/nuts needs to be adjusted. 1.5 C puffed brown rice cereal 1 C dried tart cherries 1 C almonds (raw or whole roasted unsalted) 2/3 C chopped dried apricots 1/4 C finely chopped bittersweet chocolate ~2 Tbsp butter 2 Tbsp packed light brown sugar 1/2 C brown rice syrup 1/4 C creamy almond butter (or nutella) 1/4 tsp salt Line a pan with foil and butter it (8-inch square recommended) Combine cereal, cherries, almonds, apricots, and chocolate in a bowl. Cook butter, sugar, syrup, almond butter, and salt over medium heat until mixture is smooth. Bring to a simmer and cook 1 minute, stirring constantly to prevent scorching. Immediately pour bubbling mixture over cereal mixture and stir until well combined Press mixture firmly into prepared pan, using lightly buttered hands. Chill until firm, about 1 hour. Cut into bars. --Add: pumpkin seeds, pecans.
