Eggnog cake 2 sticks of butter (softened) 3/4 cup sugar 2 large eggs 2 Tbs vanilla 3 Tbs rum/brandy (in my family we are also fond of bourbon.) 2 cups Flour (sifted) 2 tsp baking powder 1 tsp salt 1 1/2 cup eggnog 2 tsp nutmeg 1/2 tsp turmeric (this adds a certain touch of color and flavor that I like) Preheat oven to 350F In a large bowl you will cream together butter and sugar and once that is light in color you will beat in eggs, vanilla and brandy/rum. Taste some of the rum if you must. You want to make sure it is good. In another bowl you will sift together flour, baking powder and salt. To make things nice and complicated you will alternate adding flour and eggnog to the creamed sugar/egg/booze mixture. (usually you can do this in three parts) Mix well and then add the nutmeg and turmeric at the end. You may want to add more or less nutmeg. It should give the batter a pretty speckled look. Pour into a greased/floured 9x9 square pan or a 12" springform pan. (take yer pick) Bake for 40-50 minutes (or until a knife comes out clean when placed in the cake) You can eat this as is or you can make a rum glaze to pour on top. For the party I took this to I whipped together some whipping cream, sugar, nutmeg and orange zest and then piped it on top of the cake with some pretty designs. High in fat and likely to kill you at some point. Merry Christmas!
