Coffeehouse Scones 1.5 C whole-wheat pastry flour (or substitute 0.5 C soy flour) 0.5 C oat flour (or grind up oats in a food processor) 1 tsp baking powder 0.5 tsp baking soda 0.25 tsp salt 1 stick unsalted butter (8 Tbsp) 2/3 - 3/4 C buttermilk 1 tsp vanilla extract (optional) Combine dry ingredients, and then cut in the butter. Add buttermilk and vanilla extract, then knead gently and shape into a round. Cut into 8 wedges. Bake on a baking sheet at 400 degrees for 15-18 minutes.
