Cheddar and Cayenne Crackers (Food and Wine, via Annie) 1 stick (0.5 C) unsalted butter, room temperature 1 pound sharp cheddar cheese, coarsely shredded 1 tsp salt 1/4 tsp cayenne pepper dash of hot sauce 1.5 C all-purpose flour Beat butter, cheese, salt, cayenne, and hot sauce until well-blended. Add flour and mix until a soft dough forms. Pat into two disks, wrap in plastic and refrigerate at least 2 hours. Preheat oven to 350 degrees F. Line baking sheets with parchment paper. Roll out dough and cut into 2x1 inch cracker strips, and put on baking sheets. Bake around 25 minutes, or until crackers are lightly browned.
